(Undated) — Deep frying the Thanksgiving turkey has become very popular. University of Illinois Extension Food and Nutrition Educator, Caitlin Mellendorf, says it’s important to make sure the deep fryer is well away from any structures and on a stable, level surface, make sure the turkey is thoroughly thawed, and use appropriate oil. She says “high smoke point oils” such as peanut, corn, canola, rice, or sunflower oil are good choices because they can be heated to high temperatures safely. She says the U of I Extension has plenty of resources for those preparing holiday feasts and those who simply want to learn more about food preparation in general.
